Sweet and salty combinations are favorites for many on the plate, so we serve cranberry sauce with duck, stuff pork tenderloin with plums, and always add figs to the sauce for pašticada. And these are not the only examples. Right now, it‘s grape season, the harvest is in full swing, and its juicy berries are already being made into wine, juice, jam, and vinegar, while true connoisseurs also use them as an addition to savory and sweet dishes.
So, if you are already tired of eating fresh grapes, you can also prepare them in cooked or baked dishes. Some time ago, our Slavica Šagolj made a big editorial focused precisely on this ingredient and we have selected our three favorites.
Bruschetta with grapes
You will need:
baguette bread
250 g ricotta cheese
250 g fresh grapes
100 ml olive oil
3 cloves of garlic
a few sprigs of thyme
2 tablespoons honey of your choice
100 ml red wine
50 ml balsamic vinegar
salt and pepper
Preparation:
Slice the bread and heat it in a toaster or oven.
Put cleaned and washed grapes in a pot over low heat. Add honey, wine, vinegar, and a bit of pepper and let the liquid reduce while the grapes soften. The maximum time needed for preparation is 15 minutes.
In a small bowl, put olive oil, finely chopped garlic, and salt, and mix well.
Spread the toasted bread with the olive oil and garlic mixture, then add ricotta cheese and the cooked grapes.
Sausages with grapes
You will need:
450 g fresh sausages of your choice
2 onions
4 cloves of garlic
a pinch of mustard seeds
150 g fresh grapes
2 tablespoons wine vinegar
3 tablespoons sunflower oil
Preparation:
Put oil and sausages in a heated pan and fry briefly. Add sliced onions and garlic and fry for about 10 minutes until the onions soften. Then add mustard seeds, fresh grapes, and wine vinegar, and simmer everything over low heat for about 15 minutes. Be sure not to let all the liquid evaporate, as there should be some sauce left.
Serve with rice or simply with your favorite salad and homemade bread.
Cake with grapes
You will need:
4 egg yolks
100 g sugar
1 vanilla sugar
150 ml milk
50 ml sunflower oil
200 g plain flour
baking powder
4 egg whites for meringue
zest of one lemon
300 g grapes (can be half black, half white)
Preparation:
Wash the grapes well, cut them in half, and remove the seeds.
Separate the yolks from the whites. Beat the egg whites into stiff peaks.
In another bowl, put the yolks and both types of sugar and mix well. Then add milk, oil, and lemon zest. Set the mixer aside and manually mix in the flour with baking powder and the egg white meringue.
Pour the mixture into the desired mold and finally sprinkle with the cleaned grape halves.
Bake for 30 minutes at 180°C.
Sprinkle the baked and cooled cake with powdered sugar.
